My trip to Scandinavia inspired me to share my recipe for Beef A La Lyndstrom, AKA Kottbuller, or simply Swedish Meatballs

This is a wonderful dish for entertaining or family dinners. They can be served on toothpicks out of a chafing dish or piled atop noodles or potatoes with their obligatory gravy. They're delicious either way.

You'll need:

-1/4 cup of butter
-3 Tbs minced onion
-1 1" thick slice of bread
-1/2 cup of milk
-1/2 LB ground beef
-1/4 LB ground pork
-1/4 LB ground veal
-1 egg
-1 tsp salt
-1/8 tsp pepper
-1/2 tsp ground nutmeg
-1/2 tsp sugar
-1 Tbs flour
-1/2 cup warm beef stock
-1 cup warm milk or cream

Saute the onion in 1 Tbs of the butter until it's soft. Then soak the bread in the milk until soft. Combine all ingredients except flour, stock and milk or cream and mix well with your hands. Roll the meat mixture into small balls and brown in the rest of the butter.

Remove the meatballs and set them aside. Pour off all but 3 Tbs of the fat from the pan.

Add the flour and stir until it's mixed well with the fat. Remove the pan from the heat (or turn your electric skillet off) and add the stock and milk and stir constantly until the gravy is smooth and nicely thick. Put the meatballs back in the pan with the gravy and cover.

Simmer over very low heat for about 30 minutes to an hour and serve. Enjoy!
